Food trucks, disc golf eyed for shuttered Simsbury country club

Plans are in the works to redevelop Simsbury’s Tower Ridge Country Club as a food truck venue, outdoor recreation area and disc golf course.

In a statement, a group of investors led by Hartford restaurateur Wallace E. “Ron” Ronald said they are working with owner Kevin Casey, of Simsbury Real Estate Holdings, to repurpose the club, which closed down three years ago. They plan to spin off two separate entities: the Talcott Mountain Collective, which will feature rotating food trucks and outdoor space for yard games and fire pits, and Tower Ridge Disc Golf, which will use 30 acres of former golf course as an 18-hole disc golf course.
